In view of the increasing importance of palm oil in world food markets, this review is very timely. Production and output are discussed, followed in logical progression by growth of oil palm fruits and potential future production, extraction of oil and refining and refraction, and finally end uses. Rapid growth in the availability of palm oil has led to an increase in research worldwide, but specifically in the Far East. The contributions from Malaysia, a major producer of palm oil, are therefore particularly valuable.
