This report gives an overview of the major environmental issues relating to the sugar industry. The two main sources of sugar, cane and beet and the processes currently used in the extraction and refining of sugar from these sources are discussed. Modern techniques and traditional small-scale processes and variants of these are also discussed briefly. Specific processes in the manufacture of sugar from cane and beet which may cause environmental problems are listed. it is generally the wastes from the processing which are of major concern. By-products occur in the manufac-ture of sugar from both cane and beet. These have their potential and actual uses - and these are described.
