The recognition that oils such as olive and sunflower are healthy to use as well as delicious to taste, has sparked off renewed interest in all oils. This book responds to this interest by giving the reader a mixture of background information, ideas and recipes to help him or her get the most from olive, walnut, hazelnut, almond, grapeseed, sesame and sunflower oils, among others. Information on olive oil, for instance, includes how and where it is made, different types (ordinary, virgin, extra virgin), how to tell one type from another, how to make flavoured oils (chili, truffle, herb and so on), and some general cooking ideas. Recipes include a section of vinaigrettes and marinades, sauces (pesto, mayonnaise etc), main courses and baking. Similar information is given for the other oils mentioned above where appropriate; these too, include ideas and recipes for their use.
