The book shows that cooking is a language that can be built up stage by stage, resulting in the ability to make a wide range of dishes through the mastery of basic skills. For example, the ability to make batter means that not only are pancakes at your fingertips but so are fritters, waffles, Yorkshire puddings and deserts such as the French cherry pie called clafoutis. Similarly, the technique for dough is the same for pasta and closely related to that for pastry.
