Food is a basic human requirement, but in our organized Western society, the infinite variety of foods available mean that we have to make a fascinating range of choices in our everyday lives. This book aims to give a total picture of the foods consumed in the West, their nutritional value, and some of the factors governing their supply such as government policy. It then moves on to an analysis of the economic, psychological, anthropological and sociological reasons governing the behaviour of the food consumer. The third section of the book looks at the way the food suppliers service their markets, and their perception of the food consumer. This wide-ranging study should be of interest to academic and commercial analysts of the food industry, especially students of agricultural marketing, economics, catering and social nutrition.
