Karen Simmons was born in 1978 in Toronto. Due to her brilliant high school career, she won a scholarship at the age of 18. She attended Stanford University and graduated with honors. From a young age, she had a passion for healthy food, which led her to become a writer, nutritionist, and recipe creator. Almost 20 years ago, she adopted a healthy lifestyle based on the benefits of the Mediterranean Diet and later specialized, as a professional, in all other types of healthy diets. She then focused on turning all her favorite dishes into healthy, tasty, nutritious treats. That's why the author loves to share her culinary knowledge with others through her books. Karen is a woman who loves sports and also follows many of her students as a personal trainer. When she is not working and in the kitchen, Karen spends time with her husband and two young daughters.
