Ed Wood is the author of Classic Sourdoughs: A Home Baker's Handbook and owner of Sourdoughs International, a source of authentic sourdough cultures from all over the world. Wood has traveled the globe in search of these sourdough cultures, and he worked with the National Geographic Society to learn how the first leavened sourdough bread was made at Giza, in Egypt, to feed 30,000 pyramid builders. Wood is dedicated to testing new cultures, new ingredients, and new ideas to keep authentic sourdough alive.
