A homage to the tea plantation of Philbaree in the Darjeeling area of India. Founded by an intrepid Pillansian ancestor in the later 19th century, Patricia in her inexorable and immutable way has found out about this delightful brew and delved deep into it's origins and the best ways of preparation for this truly delightful cup of tea. Best served in leaf form, the only problem one encounters is getting the swollen leaves out of the mug when it has been drunk. As such, Patricia in one of her many wise comments points out that a tea strainer could be used.
